This recipe for Instant Pot Parmesan Spaghetti Squash is keto friendly, low-carb, gluten-free, vegetarian, and a perfect every time. Serve it as a side or a meal in itself. It’s without a doubt, my favorite way to prepare spaghetti squash.

What do I need?

  • Spaghetti squash
  • Water
  • Parmesan cheese 
  • Garlic salt
  • Italian seasoning

This is how you do it:

  1. Start by slicing the squash in half (width, not length).  Scoop out the seeds.
  2. Place the squash on the trivet in your Instant Pot.
  3. Add 1 cup of water to the bottom of the Instant Pot.
  4. Close lid and seal pressure release valve.  Cook on high pressure for 8 minutes.
  5. Quick release pressure and let cool.
In less than 10 minutes you can have a delicious bowl of cheesy "noodles" that are tender and oh-so flavorful.

6. Remove and scrape the sides of the squash to create spaghetti type of noodles.

7. Toss with parmesan cheese, garlic salt & Italian seasoning.

Ingredients

  • 1 large spaghetti squash
  • 1 cup of water
  • 1/3 cup parmesan cheese
  • 1/2 tsp garlic salt
  • 1/2 tsp Italian seasoning

Instructions
