What is Israeli Couscous?
Israeli couscous (also known as pearl couscous) is similar in size to grains of rice or barley, but it’s actually a pasta. It has a chewy texture, and is perfect for adding to soups or pasta salads.

Traditional couscous is different than pearl couscous. The grains are much smaller, and the texture is more like quinoa.

There are countless ways to enjoy it. It’s perfect served hot or cold. But, this Israeli Couscous Salad with Apple is my new favorite! There is a variety of textures in it and the vinaigrette coats every ingredient with a rich summery flavor.

It’s perfect served as a side dish, but it also makes a great, vegetarian meal when it’s served on its own. You can even amp it up a bit by adding in some protein-packed, canned chickpeas.

Start by cooking approximately 2 cups of Israeli couscous. While it is cooking, chop 1 Gala apple, 1/3 cup yellow onion, 1/4 cup fresh parsley and 1 Tbsp fresh mint.

In a small bowl, whisk together 4 Tbsp olive oil, juice of 1 lemon and a dash of salt & pepper.

In a large bowl, combine cooked couscous with chopped ingredients. Top with vinaigrette and 1/4 cup of crumbled feta cheese. Easy peasy!

Ingredients

  • 2 cups Israeli Couscous
  • 1 Gala apple
  • 1/3 cup yellow onion
  • 1/4 cup fresh parsley
  • 1 Tbsp fresh mint
  • 4 Tbsp olive oil

  • Salt & Pepper- to taste
