I love a good veggie dip and this Oven Roasted Cauliflower Hummus is my new fav. It’s the perfect low carb dip or spread!

If you’re trying to eat healthier or happen to be following the Whole30 program (which doesn’t allow you to eat legumes), try swapping the usual garbanzo beans for cauliflower. It’s a great tasting alternative.

Cauliflower has become a staple for low carb, keto and whole30 people. It can mimic the taste and texture of starchy foods without carbs. You can find people swapping it for rice, pizza crusts, and mashed potatoes.

To create this easy Oven Roasted Cauliflower Hummus, start by chopping 1 large cauliflower into small chunks. Drizzle with 1-2 Tbsp of olive oil and a dash of salt & pepper. Bake at 350 degrees F for 30 minutes.

Remove the cauliflower from your oven and place it in food processor. Add 3 Tbsp olive oil, 1/2 tsp of garlic salt, 1 tsp lemon juice and a dash of salt & pepper.

Blend until you have a smooth consistency.

Ingredients

  • 1 head of cauliflower

  • 1/2 tsp garlic salt
