This easy to make, Tuscan 3 Bean Salad combines garbanzo, navy, and cannellini beans with sun-dried tomatoes, red onion, fresh herbs and a light dressing. All of which come together in the most delicious way!

It’s fresh, healthy and protein packed. Not to mention, there is no cooking required! Perfect for your next summer gathering.

In a large bowl, combine the following ingredients:

  • 1 15oz can garbanzo beans (drained & rinsed)
  • 1 15oz can navy beans (drained & rinsed)
  • 1 15oz can cannellini beans(drained & rinsed)
  • 1/2 cup red onion-chopped
  • 1/4 cup sun dried tomatoes- chopped

In a small bowl, mix together the following ingredients to create the dressing:

  • 2 Tbsp oil from sun dried tomato jar
  • 2 Tbsp red wine vinegar
  • 1/2 tsp salt & pepper
  • 1 tsp minced garlic

Pour the dressing over the bean mixture and stir well. Toss salad with 1/4 cup chopped, fresh basil and 1/4 cup crumbled feta cheese. Store in an air-tight container in your refrigerator until you are ready to serve.

Tuscan 3 Bean Salad

Ingredients

  • 1 15 oz garbanzo beans (drained & rinsed)
  • 1 15 oz navy beans (drained & rinsed)
  • 1 15 oz cannellini beans (drained & rinsed)
  • 1/2 cup red onion- chopped
  • 1/4 cup sun dried tomatoes- chopped
